500ml (2 cups) milk
4 eggs
100g unsalted butter, melted
75g (1/2 cup) plain flour
1 zucchini, coarsely grated
2 rindless middle bacon rashers, coarsely chopped
300g can corn kernels, drained
80g (1 cup) coarsely grated cheddar
Step 1
Preheat oven to 180C/160C fan forced.
Grease a 4cm-deep, 18 x 28cm (base measurement) baking dish.
Step 2
Whisk together milk, eggs and butter in a large jug.
Season.
Sift flour into a large bowl.
Make a well in the centre.
Gradually whisk milk mixture into flour until smooth.
Place zucchini in a colander and use clean hands to squeeze out excess liquid. Add to the bowl.
Add bacon , corn and 40g (1/2 cup) cheddar.
Season.
Stir to combine.
Step 3
Pour mixture into prepared dish.
Sprinkle with remaining cheddar.
Bake for 50 minutes or until golden and set.
Set aside for 10 minutes to cool slightly.
Serve warm or cold.
